Spiritual: The Republic

Context is everything. To fully appreciate the Spiritual, is to understand the sum of it’s parts. All of the cocktails are made solely with California sourced ingredients. Everything from base spirits, liqueurs, sparkling wine, bitters and citrus are produced in California. An exercise in drinking local but also a celebration of the staggering bounty of our great State.

Mount Eden Vineyards

Estate Chardonnay Vertical

One could speculate as to why Mount Eden’s Chardonnay ages so remarkably well. Jeffrey Patterson, winemaker at Mount Eden Vineyards since  1982  will demure, pointing to the quality of the grapes as the source of his wine’s longevity rather than his own prowess as a winemaker. “It’s a historic selection, ” he notes. The estate’s Chardonnay vines trace their lineage to cuttings shipped to California directly from Burgundy around 1900, and they haven’t been modified or  “cleaned up”  since. Jeffrey believes that this clone’s smaller berry allows for a longer–lived wine, owing to the higher ratio of skin–to–juice contact.

In the vineyard, Jeffrey doesn’t crop heavily and picks grapes at moderate ripeness to preserve their natural acidity. in the winery he keeps barrels  “fairly well topped, ”  he says. “When I move the wine from barrel to tank, I’m very careful not to oxidize it along the way.” Combined with the perfect clonal selection and nearly ideal growing conditions, Jeffrey’s sensibilities in both the vineyard and winery have afforded Mount Eden’s Chardonnay an enduring character in any vintage.
